Tofu PB Mousse with Chocolate Chips
I recently went on a date to a guy's house who cooked me a homemade vegan dinner from scratch. Unfortunately it didn't work out with that dude. And I laughed that he cooked a vegan bodybuilder nothing but veggies for dinner. However, the dessert he made for me was a huge winner. Definitely the star of the meal.
He made me a peanut butter-flavoured mousse made out of silken tofu. And drizzled chocolate over top which of course was the perfect decadent accompaniment to the PB.
It was sweet, creamy, chocolate-y and satiating. And I just knew I could make my own higher protein version that would become my new fave late-night, sweet tooth satisfier.
Pro Tip: Make sure you have a high speed blender or use a food processor to make it the perfect consistency.
And feel free to make a beautiful chocolate glaze for a fancier looking dessert. But I'm lazy at night and just mix a few chocolate chips into my bowl of mousse and enjoy it like that.

(Recipe makes roughly four servings and these macros are not factoring in the addition of chocolate chips FYI...)

So without further ado, here is the recipe...
Ingredients:
1 package extra-firm tofu (water drained)
2 - 3 Tbsp. all-natural peanut butter (can also sub or add in powdered PB for additional flavour / to accommodate your macros)
1/4 - 1/3 cup maple syrup (depending how sweet you like it)
1 tsp. vanilla extract
1/4 tsp. sea salt
1/3 - 1/2 cup unsweetened soy milk
Method:
1) Drain tofu. Break it up into small-ish pieces and add to high powered blender or food processor along with all other ingredients.
2) Blend for 2 - 3 minutes until smooth and mousse-y. Add more soy milk if needed. And adjust for PB smoothness / maple syrup sweetness to your liking.
3) Throw in a small handful of chocolate chips (again up to your personal preference) and enjoy!
